We are all exhausted of the idea: “What shall we have for lunch today”? Aren’t we? I started working from home one year ago and thought that I will have more time for the things I usually did not want to do when I got back home from work, but even now, when the kitchen is literally two steps away, it does not make a big difference. The carrot can not cut itself, the meat can not put itself into the oven, in other words, you still have to spend the same amount of time in the kitchen if you want to eat a healthy meal.

That is why, I always try to think of food preparation hacks, and I actually did that with the rice with chicken and vegetables recipe, that my mother in law use to make for us and my husband loves so much.

So, the whole procedure takes me about 15-20 minutes. You need the following ingredients for this quick lunch:

  • Preboiled rise
  • One zucchini
  • One carrot
  • Broccoli (if I do not have broccoli I use cabbage)
  • One green or red pepper
  • 200 gr Chicken breast
  • Soy sauce
  • Curry
  • Salt and Black pepper

Now since i invented my own version of this dish, I can not tell you the exact amount of soy sauce I pour in this meal, but I think it is about 3 ts . If it is not enough, you can always put some extra later when you eat it.

So, first boil two cups of water and pour one cup of the preboiled rise. In the meantime, I cut the chicken breast into little chunks and start to fry it in the pan. Pour 1-2 ts olive oil. Recently I started using Grape seed Oil and it is actually very good. While the rise and the chicken are cooking, cut the vegetables into long  pieces Julienne (Matchstick) Cuts (except for the broccoli) and wait for the chicken to be done. When the chicken is ready, I get it out from the pan into a plate, and put the vegetables in the same pan, but a little bit more oil and fry them on high temperature 2-3 minutes. In the mean time the rise should be ready, so one minute before it is done , I put salt and pepper and i tea spoon curry. So, the vegetables are done, i put the chicken back in the pan, and put salt, pepper and soy sauce. After a minute I put the rise into the pan with the chicken and the vegetables and leave it on medium temperature for about 2 minutes. Stir the mix for 2 minutes, and voila, you have delicious lunch in no time.

What I like the most about this meal is that you get to do things simultaneously, while the rise is boiling and the chicken is frying, you have a time to prepare the vegetables. Try it, it contains all the minerals and vitamins from the vegetables, proteins from the chicken and carbs from the rise, so there you go, a healthy balanced lunch in 15.
